Sukuma wiki with tomatoes and onions

Sukuma wiki (collard greens) is quick, cheap and full of goodness. Cook it briefly so it stays bright green. Serves 4 as a side.
Ingredients
- 1 large bunch sukuma wiki, washed
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, chopped
- Salt to taste
- A squeeze of lemon (optional)
Method
- Remove the thick stems, roll the leaves together and slice them very thinly.
- Cook the onion in the oil until soft. Add the tomatoes and a pinch of salt and cook until soft, about 5 minutes.
- Add the sukuma and stir for 3 to 5 minutes, just until it wilts and is tender. Do not overcook.
- Season with salt and a squeeze of lemon, and serve with ugali, githeri or ndengu.
